Where can fires occur in a kitchen?
A fryer, fat or oil fire occurs when the flammable fat overheats and ignites.
Even with all the necessary precautions, accidents can happen when large quantities of fat are in use during the preparation of food, often under time pressure to some extent. It only takes a moment’s inattention or a single fault in the technical installations to create a spark or overheating that can ignite the fat.
The fire can develop very quickly, and flames and sparks can quickly spread through hoods and extraction systems and be carried to other areas of the building where they can cause extensive damage
